			- 4 large lemons, zest and juice
 - 1 cup granulated sugar
 - 4 large eggs
 - 1/2 cup unsalted butter, cubed
 
Instructions
- In a medium saucepan, whisk together the lemon zest, lemon juice, sugar, and eggs until well combined.
 - Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
 - Remove from heat and stir in the butter until melted and smooth.
 - Strain the mixture through a fine-mesh sieve into a bowl to remove any lumps.
 - Let cool, then transfer to jars and refrigerate.
 
Notes
- Store lemon curd in the refrigerator for up to 2 weeks.
 - You can use lemon curd as a filling for pastries or on toast.
