- 3 large eggs
- 1/2 cup granulated sugar

- 1/4 cup melted butter
- 1/2 cup heavy cream
- 1/2 cup Meyer lemon juice
- 1 tablespoon lemon zest
- 1 cup water
- 1 tablespoon gelatin powder
Instructions
- Preheat the oven to 350°F (175°C) and prepare a cake pan.
- In a bowl, mix pistachio flour, sugar, and all-purpose flour.
- Beat the eggs until fluffy and gradually fold them into the flour mixture.
- Add melted butter and mix until smooth.
- Pour the batter into the prepared pan and bake for 25 minutes.
- For the mousse, whip heavy cream and fold in Meyer lemon juice and zest.
- Prepare the mirror glaze by heating water and dissolving gelatin.
- Allow the sponge cake to cool, layer with mousse, and finish with the glaze.
- Chill in the refrigerator for at least two hours before serving.
