Description

Ingredients

  • 1 cup pistachio flour
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter
  • 1/2 cup heavy cream
  • 1/2 cup Meyer lemon juice
  • 1 tablespoon lemon zest
  • 1 cup water
  • 1 tablespoon gelatin powder

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a cake pan.
  2. In a bowl, mix pistachio flour, sugar, and all-purpose flour.
  3. Beat the eggs until fluffy and gradually fold them into the flour mixture.
  4. Add melted butter and mix until smooth.
  5. Pour the batter into the prepared pan and bake for 25 minutes.
  6. For the mousse, whip heavy cream and fold in Meyer lemon juice and zest.
  7. Prepare the mirror glaze by heating water and dissolving gelatin.
  8. Allow the sponge cake to cool, layer with mousse, and finish with the glaze.
  9. Chill in the refrigerator for at least two hours before serving.
