Instructions
- Preheat the oven to 375°F (190°C).
- Blind bake the pie crust for 10 minutes.
- In a skillet, sauté spinach until wilted, then remove from heat.
- In a bowl, whisk together the ricotta, eggs, Parmesan, salt, pepper, and nutmeg.
- Stir in the sautéed spinach.
- Pour the mixture into the pre-baked crust.
