Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons fajita seasoning
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 2 cups cooked rice
  • 1 cup salsa
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add the chicken thighs and cook until browned.
  3. Stir in fajita seasoning and cook for 2 minutes.
  4. Mix in the bell peppers and onion, cooking until soft.
  5. In a large bowl, combine the cooked rice, salsa, and chicken mixture. Stir well.
  6. Transfer to a casserole dish and sprinkle with shredded cheddar cheese.
  7. Bake for 20-25 minutes, until the cheese is bubbly and golden.

Notes

  • For added flavor, marinate the chicken with the fajita seasoning for a few hours.
