These Fluffy Cinnamon Sugar Donut Muffins are a delicious and easy homemade treat that everyone will love.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for coating)
- 2 teaspoons ground cinnamon (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- While the muffins are cooling, mix the granulated sugar and cinnamon in a bowl for coating.
- Once cooled, brush the muffins with melted butter and roll them in the cinnamon sugar mixture.
Notes
- For a richer flavor, try using brown sugar in place of granulated sugar.
- These muffins are best served warm.
