- 4 large eggs
- 1 cup cottage cheese
- 1/2 cup diced turkey bacon
- 1/4 cup chopped green onions
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, whisk together the eggs and cottage cheese until smooth.
- Add the turkey bacon, green onions, cheddar cheese, salt, and pepper. Mix until well combined.
- Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the muffins are set and lightly golden.
- Remove from the oven and let cool for a few minutes before removing from the tin.
- Enjoy warm or store for later!
Notes
- These muffins can be stored in the refrigerator for up to 5 days.
- They can also be frozen for up to 3 months. Thaw and reheat before serving.
