Description

Delicious and easy to make Fluffy Cottage Cheese Egg Muffins with turkey bacon, perfect for breakfast or a healthy snack!


Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup diced turkey bacon
  • 1/4 cup chopped green onions
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together the eggs and cottage cheese until smooth.
  3. Add the turkey bacon, green onions, cheddar cheese, salt, and pepper. Mix until well combined.
  4. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the muffins are set and lightly golden.
  6. Remove from the oven and let cool for a few minutes before removing from the tin.
