Ingredients

  • 2 pounds short ribs
  • 4 medium onions, sliced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 2 teaspoons thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the short ribs and brown on all sides.
  2. Remove the short ribs and add the sliced onions, cooking until caramelized.
  3. Deglaze the pot with the red wine, scraping up any browned bits.
  4. Add the short ribs back to the pot along with the beef broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 2-3 hours until the ribs are tender.
  6. Remove the short ribs, shred the meat, and return it to the pot. Season with salt and pepper.
  7. Serve hot, topped with crusty bread and melted cheese if desired.
