- 4 medium onions, sliced
- 4 cups beef broth
- 1 cup red wine

- 1 bay leaf

Instructions
- Heat the olive oil in a large pot over medium heat. Add the short ribs and brown on all sides.
- Remove the short ribs and add the sliced onions, cooking until caramelized.
- Deglaze the pot with the red wine, scraping up any browned bits.
- Add the short ribs back to the pot along with the beef broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 2-3 hours until the ribs are tender.
- Remove the short ribs, shred the meat, and return it to the pot. Season with salt and pepper.
- Serve hot, topped with crusty bread and melted cheese if desired.

- For extra flavor, use bone-in short ribs.
