- 2 tablespoons olive oil
- 2 pounds short ribs
- 4 large onions, thinly sliced
- 4 cups beef broth
- 1 cup white wine
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
- 1 loaf French bread
- 2 cups Gruyère cheese, shredded
Instructions
- In a large pot, heat olive oil over medium-high heat. Add short ribs and sear on all sides until browned. Remove from pot and set aside.
- Add onions to the pot and cook until caramelized, about 20 minutes.
- Stir in garlic and cook for 1 minute more.
- Return short ribs to the pot. Add wine, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2 hours, or until ribs are tender.
- Remove short ribs, shred the meat, and return to the soup.
- Preheat the oven to broil. Toast slices of French bread.
- Serve the soup in bowls topped with toasted bread and shredded Gruyère cheese. Broil until cheese is bubbly and golden.

- For a richer flavor, you can use homemade beef broth.
- Feel free to add more herbs like rosemary or bay leaves for additional depth.
