- 1 fresh pineapple
- 1 cup all-purpose flour
- 1 cup coconut milk
- 1/2 cup shredded coconut
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 quart oil for frying
Instructions
- Cut the pineapple into rings and remove the core.
- In a bowl, mix flour, sugar, salt, and shredded coconut.
- In a separate bowl, combine coconut milk and vanilla extract.
- Dip each pineapple ring into the wet mixture, then dredge in the dry mixture.
- Heat oil in a deep pan over medium heat.
- Fry the pineapple rings until golden brown, around 3 minutes per side.
- Remove and place on paper towels to drain.
- Serve warm with coconut dipping sauce.
Notes
- For extra flavor, add cinnamon to the batter.
- Ensure oil is hot enough before frying for best results.
