Ingredients

  • 1 fresh pineapple
  • 1 cup all-purpose flour
  • 1 cup coconut milk
  • 1/2 cup shredded coconut
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 quart oil for frying

Instructions

  1. Cut the pineapple into rings and remove the core.
  2. In a bowl, mix flour, sugar, salt, and shredded coconut.
  3. In a separate bowl, combine coconut milk and vanilla extract.
  4. Dip each pineapple ring into the wet mixture, then dredge in the dry mixture.
  5. Heat oil in a deep pan over medium heat.
  6. Fry the pineapple rings until golden brown, around 3 minutes per side.
  7. Remove and place on paper towels to drain.
  8. Serve warm with coconut dipping sauce.

Notes
