Ingredients

  • 2 cups cooked chicken, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon minced garlic
  • 1 cup Parmesan cheese, grated
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1 cup corn, frozen or canned
  • 2 tablespoons olive oil
  • 1 teaspoon thyme

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, cooking until fragrant.
  3. Add diced potatoes and cook for 5 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat, add chicken, corn, and thyme.
  6. Stir in heavy cream and Parmesan cheese until melted.
  7. Simmer for 10 minutes until thickened.
  8. Season with salt and pepper to taste.

Notes

  • For a thicker chowder, blend a portion of it and stir back in.
  • Serve with crusty bread.
