- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 large eggs
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C). Grease a jelly roll pan and line it with parchment paper.
- In a bowl, mix the flour, cocoa, baking powder, baking soda, and salt.
- In another bowl, beat the eggs and sugar until light and fluffy. Add vanilla and buttermilk.
- Gradually mix in the dry ingredients until combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes until a toothpick comes out clean.
- Once cooled, roll the cake with parchment and let it cool completely.
- Prepare the frosting and spread it over the cake before rolling it back up.
- Chill for an hour before slicing and serving.
Notes
- For a richer flavor, add espresso powder to the batter.
- Feel free to substitute the nuts with your favorite nuts or omit them altogether.
