  • 3 large eggs

  • 1/2 cup buttermilk
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a jelly roll pan and line it with parchment paper.
  2. In a bowl, mix the flour, cocoa, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy. Add vanilla and buttermilk.
  4. Gradually mix in the dry ingredients until combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 12-15 minutes until a toothpick comes out clean.
  7. Once cooled, roll the cake with parchment and let it cool completely.
  8. Prepare the frosting and spread it over the cake before rolling it back up.
