  • 1/2 cup unsalted butter, softened
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans
  • 1 cup chocolate ganache

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, butter, buttermilk, and vanilla until combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Once baked, roll the cake in the parchment paper and let it cool completely.
  8. Unroll the cake and spread the chocolate ganache, coconut, and pecans evenly.
  9. Roll the cake back up tightly and refrigerate before serving.
