Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup carrots, chopped
  • 1 cup peas
  • 1/2 cup onions, chopped
  • 1/2 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Add onions and cook until translucent.
  3. Stir in flour, salt, pepper, and thyme until well combined.
  4. Slowly add chicken broth and milk, stirring continuously until thickened.
  5. Mix in chicken, carrots, and peas. Remove from heat.
  6. Place one pie crust in a pie dish, fill with the chicken mixture, and cover with the second pie crust.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake for 30-35 minutes or until crust is golden brown.
  9. Let cool for a few minutes before serving.
