- 2 cups cooked chicken, diced
- 1 cup carrots, chopped
- 1 cup peas
- 1/2 cup onions, chopped
- 1/2 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 package refrigerated pie crusts
Instructions
- Preheat oven to 425°F (220°C).
- In a saucepan, melt butter over medium heat. Add onions and cook until translucent.
- Stir in flour, salt, pepper, and thyme until well combined.
- Slowly add chicken broth and milk, stirring continuously until thickened.
- Mix in chicken, carrots, and peas. Remove from heat.
- Place one pie crust in a pie dish, fill with the chicken mixture, and cover with the second pie crust.
- Cut slits in the top crust to allow steam to escape.
- Bake for 30-35 minutes or until crust is golden brown.
- Let cool for a few minutes before serving.
