Ingredients

- 1 leg of lamb
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup red wine
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix garlic, olive oil, rosemary, oregano, salt, and pepper.
- Rub the mixture all over the leg of lamb.
- Place the lamb in a roasting pan and pour the red wine around it.
- Roast in the preheated oven for about 1.5 to 2 hours or until an internal temperature of 145°F (63°C) is reached.
- Let the lamb rest for 15 minutes before slicing.
Notes
- For extra flavor, marinate the lamb overnight.
- Serve with roasted vegetables for a complete meal.
