Description
A delicious and hearty green chile stew made with Hatch hot chiles and served with homemade tortillas.
Ingredients

- 2 pounds pork shoulder
- 4 cups chicken broth
- 1 cup diced Hatch green chiles
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 medium potatoes, diced
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
- Add pork shoulder, browning on all sides.
- Stir in chicken broth, green chiles, potatoes, cumin, and oregano.
- Bring to a boil, then reduce heat and simmer for 1.5-2 hours until pork is tender.
- Shred the pork and return it to the pot. Adjust seasoning with salt and pepper.
Notes
- Serve with homemade tortillas for a complete meal.
- Can be topped with cilantro or avocado for extra flavor.
