Description

A delicious and hearty green chile stew made with Hatch hot chiles and served with homemade tortillas.


Ingredients

  • 2 pounds pork shoulder
  • 4 cups chicken broth
  • 1 cup diced Hatch green chiles
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
  2. Add pork shoulder, browning on all sides.
  3. Stir in chicken broth, green chiles, potatoes, cumin, and oregano.
  4. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until pork is tender.
  5. Shred the pork and return it to the pot. Adjust seasoning with salt and pepper.

Notes

  • Serve with homemade tortillas for a complete meal.
  • Can be topped with cilantro or avocado for extra flavor.
