- 2 cups shredded coconut
- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup semisweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the shredded coconut, condensed milk, vanilla extract, and almond extract until well combined.
- Scoop the mixture onto the prepared baking sheet, shaping them into bite-sized balls.
- Bake for 15-20 minutes or until the edges turn golden brown.
- While the bites are cooling, melt the chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
- Dip each coconut bite into the melted chocolate and place back on the baking sheet.
- Refrigerate until the chocolate sets, about 30 minutes.
