- 4 medium-sized apples
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon salt
- 1/2 cup granola
- 1/2 cup chopped pecans
- 1/4 cup maple syrup
Instructions
- Preheat the oven to 350°F (175°C).
- Core the apples and carve out enough space for the filling.
- In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and salt until well combined.
- Fold in granola and chopped pecans.
- Stuff each apple with the pumpkin mixture and drizzle with maple syrup.
- Bake in the preheated oven for 25-30 minutes until the apples are tender.
- Let them cool for a few minutes before serving.
