- ½ cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a mixing bowl, combine grated carrots and crushed pineapple.
- In another bowl, mix both sugars, oil, and eggs until well combined.
- Gradually add the dry ingredients, then fold in the carrot and pineapple mixture.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Allow to cool before removing from pans and frosting as desired.
