Deliciously moist and healthy, these muffins are a perfect blend of flavors with the goodness of Greek yogurt and pecans.


Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas and mix in the Greek yogurt, honey, melted coconut oil, vanilla extract, and eggs.
  3. In a separate bowl, combine the whole wheat flour, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped pecans.
  6. Pour the batter into a greased muffin tin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
