- 2 ripe bananas
- 1 cup Greek yogurt
- 1/2 cup honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas and mix in the Greek yogurt, honey, melted coconut oil, vanilla extract, and eggs.
- In a separate bowl, combine the whole wheat flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chopped pecans.
- Pour the batter into a greased muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
