Description

Ingredients

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, cut into wedges
  • 1 cucumber, diced
  • 1 tablespoon vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Marinate lamb chops with olive oil, rosemary, thyme, garlic, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the lamb chops for 4-5 minutes on each side for medium rare.
  4. Meanwhile, boil the potato wedges until tender, then drain and toss with olive oil, salt, and pepper. Bake at 425°F until golden brown.
  5. In a bowl, combine cucumber, vinegar, lemon juice, and dill. Mix well.
  6. Serve the grilled lamb chops with potato wedges and cucumber salad on the side.

Notes

  • For a spicier kick, add red pepper flakes to the marinade.
  • Let the lamb chops rest for a few minutes before serving to retain their juices.
