Description
Delicious herb and zucchini stuffed jumbo shells for a comforting meal.
Ingredients

- 12 large jumbo pasta shells
- 1 tablespoon olive oil
- 1 medium zucchini, diced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 2 cloves garlic, minced
- 1 cup marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo shells according to the package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat, and sauté the diced zucchini until tender.
- In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, basil, garlic, and sautéed zucchini. Mix well.
- Stuff the cooked jumbo shells with the cheese and zucchini mixture.
- Spread marinara sauce in the bottom of a baking dish. Place the stuffed shells on top of the sauce.
- Pour additional marinara sauce over the shells.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until bubbly.
Notes
- For added flavor, you can sprinkle more cheese on top before the final baking stage.
