- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup finely chopped onion
- 1 cup buttermilk
- 1 large egg
- 2 cups vegetable oil for frying
Instructions
- In a large bowl, whisk together cornmeal, flour, baking powder, salt, and black pepper.
- Stir in chopped onion.
- In a separate bowl, mix buttermilk and egg.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Heat oil in a deep pan to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry until golden brown, about 3-4 minutes.
- Remove and drain on paper towels.
Notes
- For extra flavor, add jalapeños or diced peppers to the mixture.
- Serve warm with your favorite dipping sauce.
