Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup finely chopped onion
  • 1 cup buttermilk
  • 1 large egg
  • 2 cups vegetable oil for frying

Instructions

  1. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and black pepper.
  2. Stir in chopped onion.
  3. In a separate bowl, mix buttermilk and egg.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Heat oil in a deep pan to 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 3-4 minutes.
  7. Remove and drain on paper towels.

Notes
