Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1 tbsp baking powder

  • 1 egg, beaten
  • 1 cup buttermilk
  • 2 cups oil for frying

Instructions

  1. In a large bowl, mix together cornmeal, flour, baking powder, salt, and pepper.
  2. Stir in the chopped onion.
  3. In another bowl, combine the egg and buttermilk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Heat oil in a deep pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil.
  7. Fry until golden brown on all sides, about 3-4 minutes.
  8. Remove and drain on paper towels.
