- 1 cup cornmeal
- 1 cup flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, finely chopped
- 1 egg, beaten
- 1 cup buttermilk
- 2 cups oil for frying
Instructions
- In a large bowl, mix together cornmeal, flour, baking powder, salt, and pepper.
- Stir in the chopped onion.
- In another bowl, combine the egg and buttermilk.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat oil in a deep pan over medium heat.
- Drop spoonfuls of the batter into the hot oil.
- Fry until golden brown on all sides, about 3-4 minutes.
- Remove and drain on paper towels.
