- 2 pounds beef chuck roast
- 6 slices turkey bacon
- 1 cup beef broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, chopped
- 2 sticks celery, chopped
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions
- Preheat your oven to 325°F (163°C).
- In a large Dutch oven, heat the olive oil over medium-high heat.
- Add the turkey bacon and cook until crispy.
- Add the onions and garlic to the pot, sauté until translucent.
- Place the beef chuck roast into the pot and sear on all sides.
- Add the carrots, celery, and spices to the pot.
- Pour in the beef broth, ensuring the roast is partially submerged.
- Cover the pot and place it in the oven.
- Cook for 3 to 4 hours, or until the meat is fork-tender.
- Remove from the oven and let rest before slicing.
