  • 2 pounds beef chuck roast
  • 6 slices turkey bacon
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, chopped
  • 2 sticks celery, chopped
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat.
  3. Add the turkey bacon and cook until crispy.
  4. Add the onions and garlic to the pot, sauté until translucent.
  5. Place the beef chuck roast into the pot and sear on all sides.
  6. Add the carrots, celery, and spices to the pot.
  7. Pour in the beef broth, ensuring the roast is partially submerged.
  8. Cover the pot and place it in the oven.
  9. Cook for 3 to 4 hours, or until the meat is fork-tender.
