- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup shredded cheddar cheese
- 2 jalapeños, diced
- 6 slices turkey bacon, cooked and crumbled
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the cornmeal, flour, baking powder, and salt.
- In another bowl, whisk together the buttermilk, eggs, and melted butter.
- Combine the wet and dry ingredients, stirring until just mixed.
- Fold in the cheese, jalapeños, and turkey bacon.
- Pour the batter into a greased baking dish.
- Bake for 20-25 minutes, or until golden brown.
- Allow to cool slightly before serving.
Notes
- Feel free to adjust the number of jalapeños for desired spice level.
