Ingredients

  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup erythritol
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, mix together the almond flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the erythritol and eggs until light and fluffy.
  4. Add the melted butter and vanilla to the egg mixture and mix well.
  5. Combine the dry ingredients with the wet ingredients, then stir in the almond milk until smooth.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cake cool before removing from the pan.
