A delicious take on a traditional pot roast, infused with Korean flavors.


Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 2 cups beef broth
  • 1/4 cup gochujang
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 carrots, cut into chunks
  • 4 potatoes, peeled and quartered

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat vegetable oil in a large Dutch oven over medium-high heat.
  3. Sear the beef chuck roast on all sides until browned.
  4. In a bowl, mix beef broth, gochujang, soy sauce, brown sugar, and garlic.
  5. Pour the mixture over the roast in the Dutch oven.
  6. Add onion, carrots, and potatoes around the roast.
  7. Cover and roast in the oven for 3-4 hours, or until tender.
  8. Remove roast and let it rest before slicing.

Notes

  • For a thicker sauce, remove the roast and reduce the liquid on the stovetop.
  • Pair with steamed rice for a complete meal.
