A delicious take on a traditional pot roast, infused with Korean flavors.
Ingredients

- 3 pounds beef chuck roast
- 1 tablespoon vegetable oil
- 2 cups beef broth
- 1/4 cup gochujang
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 carrots, cut into chunks
- 4 potatoes, peeled and quartered
Instructions
- Preheat your oven to 300°F (150°C).
- Heat vegetable oil in a large Dutch oven over medium-high heat.
- Sear the beef chuck roast on all sides until browned.
- In a bowl, mix beef broth, gochujang, soy sauce, brown sugar, and garlic.
- Pour the mixture over the roast in the Dutch oven.
- Add onion, carrots, and potatoes around the roast.
- Cover and roast in the oven for 3-4 hours, or until tender.
- Remove roast and let it rest before slicing.
Notes
- For a thicker sauce, remove the roast and reduce the liquid on the stovetop.
- Pair with steamed rice for a complete meal.
