Ingredients

  • 3 pounds beef chuck roast
  • 1 cup gochujang
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 4 carrots, cut into chunks
  • 3 potatoes, cut into chunks
  • 1 onion, quartered
  • 2 cups beef broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix gochujang, soy sauce, honey, sesame oil, garlic, and ginger to create the marinade.
  3. Place the roast in a large baking dish and pour the marinade over the meat, ensuring it’s well coated.
  4. Surround the roast with carrots, potatoes, and onion.
  5. Pour beef broth over the vegetables.
  6. Cover with foil and bake for 3-4 hours, or until the meat is tender.
  7. Remove from oven and let rest before slicing.
  8. Serve with the vegetables and sauce from the dish.
