- 3 pounds beef chuck roast
- 1 cup gochujang
- 1/2 cup soy sauce
- 1/4 cup honey
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 inch piece ginger, grated
- 4 carrots, cut into chunks
- 3 potatoes, cut into chunks
- 1 onion, quartered
- 2 cups beef broth
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix gochujang, soy sauce, honey, sesame oil, garlic, and ginger to create the marinade.
- Place the roast in a large baking dish and pour the marinade over the meat, ensuring it’s well coated.
- Surround the roast with carrots, potatoes, and onion.
- Pour beef broth over the vegetables.
- Cover with foil and bake for 3-4 hours, or until the meat is tender.
- Remove from oven and let rest before slicing.
- Serve with the vegetables and sauce from the dish.
Notes
- For added flavor, marinate the beef overnight.
- Adjust the amount of gochujang to control the spiciness.
