- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1/2 cup unsalted butter
- 1/4 cup chicken broth
- 2 tablespoons fresh parsley, chopped
- Salt to taste
- Pepper to taste
Instructions
- Begin by seasoning the chicken breasts with salt and pepper.
- Dip each chicken breast in flour, shaking off the excess.
- In a bowl, whisk the eggs and lemon juice together.
- Heat butter in a skillet over medium heat.
- Coat the chicken in the egg mixture and then add to the skillet.
- Cook for about 5-7 minutes on each side until golden brown.
- Remove chicken and set aside.
- In the same skillet, add chicken broth and scrape up any bits.
- Return chicken to the skillet and simmer for a few minutes.
- Garnish with fresh parsley before serving.
