Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper and dredge in flour, shaking off excess.
  3. In a bowl, whisk together eggs and Parmesan cheese.
  4. Melt butter in the skillet and add chicken, cooking until golden on both sides.
  5. Remove chicken and set aside; add lemon juice and chicken broth, scraping the bottom of the skillet.
  6. Return chicken to the skillet and simmer for 5-7 minutes.
  7. Garnish with parsley before serving.
