- 4 boneless skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup unsalted butter
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat a large skillet over medium heat.
- Season chicken breasts with salt and pepper and dredge in flour, shaking off excess.
- In a bowl, whisk together eggs and Parmesan cheese.
- Melt butter in the skillet and add chicken, cooking until golden on both sides.
- Remove chicken and set aside; add lemon juice and chicken broth, scraping the bottom of the skillet.
- Return chicken to the skillet and simmer for 5-7 minutes.
- Garnish with parsley before serving.
Notes
- For added flavor, marinate the chicken in lemon juice for a few hours before cooking.
- Serve with rice or vegetables for a complete meal.
