- 1 cup powdered sugar

- 1/4 cup lemon curd
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and powdered sugar until smooth.
- Mix in the flour and salt until just combined.
- Add the vanilla extract and lemon zest, and mix until fully incorporated.
- Form small balls of dough and place them on a baking sheet.
- Make a small indentation in each ball of dough with your thumb.
- Fill each indentation with lemon curd.
- Bake for 15-20 minutes or until the edges are lightly golden.
- Allow to cool before serving.
Notes
- For a sweeter cookie, add more powdered sugar to the dough.
- Top with additional lemon zest for extra flavor.
