Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 can chili beans
- 1 cup shredded cheddar cheese
- 1/2 cup jalapeños, diced
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine cornmeal, flour, baking powder, and salt.
- In a separate bowl, whisk together milk, oil, and eggs.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chili beans, cheese, and jalapeños.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes or until golden brown.
