Ingredients

  • 2 pounds beef chuck roast
  • 1 cup balsamic vinegar
  • 1 cup cranberry sauce
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the beef with salt and pepper, then sear it on all sides until browned.
  3. Remove the beef and place it in a slow cooker.
  4. Add the balsamic vinegar, cranberry sauce, onion, garlic, rosemary, and thyme to the slow cooker.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. Shred the beef with two forks and mix with the sauce before serving.
