- 2 pounds beef chuck roast
- 1 cup balsamic vinegar
- 1 cup cranberry sauce
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the beef with salt and pepper, then sear it on all sides until browned.
- Remove the beef and place it in a slow cooker.
- Add the balsamic vinegar, cranberry sauce, onion, garlic, rosemary, and thyme to the slow cooker.
- Cover and cook on low for 8 hours or until the beef is tender.
- Shred the beef with two forks and mix with the sauce before serving.

- This dish pairs well with mashed potatoes or crusty bread.
