Ingredients

- 3 medium cucumbers, peeled and sliced
- 1 medium onion, sliced into rings
- 3 medium tomatoes, cut into wedges
- 1/2 cup vinegar
- 1/4 cup sugar
- 1 cup water
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/4 cup oil
- 1 teaspoon chopped fresh mint (optional)
Instructions
- Peel the cucumbers and slice them into thin rounds.
- Slice the onion into rings.
- Cut the tomatoes into wedges.
- Place all vegetables in a large mixing bowl.
- In a small bowl, whisk together vinegar, sugar, water, salt, pepper, and oil until sugar dissolves.
- Pour the marinade over the vegetables.
- Add chopped mint if using and toss gently to combine.
- Cover and refrigerate for at least 2 hours or overnight for best flavor.
- Serve chilled directly from the fridge.
Notes
- For extra crunch, salt cucumbers and let sit for 10 minutes before marinating.
