- 6 strips bacon, chopped
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup onion, finely chopped

- 2 cups potatoes, peeled and cubed
- 1/4 cup milk

Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix ground turkey, bacon, breadcrumbs, egg, onion, garlic powder, salt, and pepper until well combined.
- Press the mixture into a muffin tin to form cupcakes.
- Bake for 25-30 minutes or until cooked through.
- Meanwhile, boil potatoes until tender, drain, and mash with milk, butter, and sour cream.
- Top the baked meatloaf cupcakes with the whipped potatoes and serve.
