Description

Deliciously fun, these meatloaf cupcakes topped with whipped potatoes bring a new twist to a classic dish.


Ingredients

  • 1 pound ground turkey
  • 6 strips bacon, chopped
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

  • 2 cups potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix ground turkey, bacon, breadcrumbs, egg, onion, garlic powder, salt, and pepper until well combined.
  3. Press the mixture into a muffin tin to form cupcakes.
  4. Bake for 25-30 minutes or until cooked through.
  5. Meanwhile, boil potatoes until tender, drain, and mash with milk, butter, and sour cream.
