Description

Enjoy a refreshing and healthy twist with these Mediterranean Shrimp and Avocado Bowls topped with zesty mango salsa and a lime-chili sauce.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, sliced
  • 1 cup mango, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 cups mixed greens

Instructions

  1. In a bowl, combine the mango, red bell pepper, red onion, cilantro, and lime juice. Mix well and set aside to make the mango salsa.
  2. Season the shrimp with chili powder, salt, and pepper.
  3. In a skillet, cook the shrimp over medium heat until pink and cooked through, about 2-3 minutes per side.
  4. On a plate, arrange a bed of mixed greens, top with sliced avocado and cooked shrimp.
  5. Spoon the mango salsa over the top and drizzle with extra lime juice if desired.

Notes

  • For a spicier kick, add diced jalapeño to the mango salsa.
