A delicious twist on the classic grilled cheese sandwich, packed with Mediterranean flavors and healthy spinach.
Ingredients

- 2 slices whole grain bread
- 1 cup fresh spinach
- 1/2 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1/2 teaspoon dried oregano
Instructions
- Heat olive oil in a skillet over medium heat.
- Add spinach and garlic, sauté until spinach is wilted.
- Layer feta and mozzarella cheese on one slice of bread.
- Top with sautéed spinach and another slice of bread.
- Grill each side until golden brown and cheese is melted.
- Serve warm.
Notes
- For a spicy kick, add a pinch of red pepper flakes.
- Use any bread of your choice for a different flavor.
