Ingredients

- 2 large sweet potatoes
- 8 ounces burrata cheese
- 6 slices turkey bacon
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh basil, chopped
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Slice sweet potatoes into rounds and place on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
- Bake for 25 minutes or until tender.
- Meanwhile, cook the turkey bacon in a skillet until crispy. Chop into pieces.
- Remove sweet potatoes from the oven and top each slice with burrata and bacon.
- Return to the oven for an additional 5 minutes, until burrata is melty.
- Garnish with fresh basil before serving.
Notes
- For extra flavor, try adding a drizzle of balsamic glaze on top before serving.
- These appetizers can be served warm or at room temperature.
