- 1 pound turkey bacon
- 2 cups cooked pasta
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the turkey bacon until crispy, then crumble it into pieces.
- In a large bowl, combine the cooked pasta, black beans, corn, salsa, and crumbled turkey bacon.
- Stir in the cheese, chili powder, cumin, and garlic powder until well mixed.
- Transfer the mixture to a baking dish and sprinkle extra cheese on top.
- Bake for 25-30 minutes, or until the casserole is heated through and bubbly.
