Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 cups diced apples
  • 1 teaspoon cinnamon
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the crushed graham crackers and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In another bowl, beat the cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Fold in the diced apples and cinnamon.
  7. Pour the cream cheese mixture over the crusts in the pans.
  8. In a separate bowl, combine the oats, brown sugar, and flour to make the topping.
  9. Sprinkle the topping over the cheesecake mixture.
  10. Bake for about 25-30 minutes or until set.
