Ingredients

  • 8 ounces cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup caramel sauce
  • 1 package graham crackers, crushed
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 325ยฐF (163ยฐC).
  2. In a bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of mini tart pans.
  3. In a mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the vanilla extract and eggs, mixing until well combined.
  5. Stir in the sour cream and caramel sauce.
  6. Pour the cheesecake mixture over the crusts in the tart pans.
  7. Bake for 20 minutes until set. Allow to cool before serving.
  8. Drizzle with additional caramel sauce before serving.
