- 8 ounces cream cheese
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup caramel sauce
- 1 package graham crackers, crushed
- 1/4 cup melted butter
Instructions
- Preheat the oven to 325ยฐF (163ยฐC).
- In a bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of mini tart pans.
- In a mixing bowl, beat the cream cheese and sugar until smooth.
- Add the vanilla extract and eggs, mixing until well combined.
- Stir in the sour cream and caramel sauce.
- Pour the cheesecake mixture over the crusts in the tart pans.
- Bake for 20 minutes until set. Allow to cool before serving.
- Drizzle with additional caramel sauce before serving.
Notes
- For a richer flavor, use a combination of cream cheese and mascarpone.
- These can be made a day ahead and refrigerated.
