			- 2 cups all-purpose flour
 - 1 cup unsalted butter, softened
 - 1 cup powdered sugar
 - 1 teaspoon vanilla extract
 - 1 teaspoon peppermint extract
 - 1/2 cup mini chocolate chips
 - 1/4 teaspoon salt
 - 1 cup additional powdered sugar for coating
 
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
 - In a large bowl, cream together the softened butter and powdered sugar until smooth.
 - Add in the vanilla and peppermint extracts and mix until well combined.
 - Gradually add the flour and salt to the mixture, stirring until combined.
 - Fold in the mini chocolate chips.
 - Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
 - Bake in the preheated oven for 12-15 minutes, until the edges are lightly golden.
 - Once out of the oven, allow to cool for a few minutes before rolling each cookie in additional powdered sugar.
 - Let cool completely on a wire rack.
 
Notes
- For extra flavor, try adding crushed mint candies to the dough.
