- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 cups mocha ice cream, softened
- 1 cup chocolate chips
- 1 cup whipped cream
- 1/4 cup sugar

Instructions
- In a bowl, mix the chocolate cookie crumbs with melted butter until well combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a separate bowl, combine the softened mocha ice cream with chocolate chips and stir until evenly mixed.
- Spread the ice cream mixture over the crust in the springform pan.
- In another bowl, whip the cream with sugar and vanilla extract until soft peaks form.
- Spread the whipped cream over the ice cream layer and freeze until firm.
- Once set, remove from the springform pan and slice to serve.
Notes
- For an extra flavor kick, add espresso powder to the ice cream mixture.
- Top with additional chocolate chips or a drizzle of chocolate sauce before serving.
