Description

Mocha Chocolate Chip Ice Cream Cheesecake is a delightful no-bake dessert that combines rich chocolate and coffee flavors for an indulgent treat.


Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 cups mocha ice cream, softened
  • 1 cup chocolate chips
  • 1 cup whipped cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the chocolate cookie crumbs with melted butter until well combined.
  2. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a separate bowl, combine the softened mocha ice cream with chocolate chips and stir until evenly mixed.
  4. Spread the ice cream mixture over the crust in the springform pan.
  5. In another bowl, whip the cream with sugar and vanilla extract until soft peaks form.
  6. Spread the whipped cream over the ice cream layer and freeze until firm.
  7. Once set, remove from the springform pan and slice to serve.

Notes

  • For an extra flavor kick, add espresso powder to the ice cream mixture.
