Ingredients

Scale
  • 2 1/2 cups shredded sweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 12 oz semi-sweet or white chocolate chips

Instructions

  1. In a large bowl, mix shredded coconut, sweetened condensed milk, vanilla extract, salt, and powdered sugar until fully combined.
  2. Form the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  3. Refrigerate for 30–45 minutes until firm.
  4. In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring in between.

  6. Let the chocolate set at room temperature or refrigerate for 10–15 minutes until hardened.
  7. Serve immediately or store in an airtight container in the fridge.
