Ingredients
Scale
- 1 (9-inch) prepared graham cracker crust or chocolate cookie crust
- 1 package (4-serving size) instant chocolate pudding mix
- 1¾ cups cold milk
- ½ cup evaporated milk
- ½ cup granulated sugar
- ½ cup shredded sweetened coconut
- ½ cup chopped pecans
Instructions
- In a medium bowl, whisk together the pudding mix and cold milk for 2 minutes until thickened.
- Pour the mixture into the prepared crust and spread evenly.
- Refrigerate the pie for at least 30 minutes to set.
- Meanwhile, in a small saucepan, combine evaporated milk and sugar over medium heat, stirring until the sugar dissolves.
- Remove from heat, then stir in the coconut and chopped pecans.
- Allow topping to cool slightly, then spread over the set chocolate pudding layer.
- Chill the pie for 1–2 hours or until fully set. Slice and serve chilled.
Notes
- For enhanced flavor, toast the coconut and pecans before adding them to the topping.
- Use a chocolate ganache instead of pudding for a richer filling.
