Ingredients

  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar.
  3. Add the egg and vanilla extract and mix well.
  4. In another bowl, combine the rolled oats, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dried cranberries.
  7. Drop by tablespoonfuls onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
