  • 1/2 cup full-fat canned coconut milk
  • 1/2 cup whole milk or plant milk (almond or oat)
  • 1 tablespoon cream of coconut (e.g., Coco López or Goya)
  • 12 tablespoons sugar or honey (to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon blue food coloring or blue spirulina
  • 1 cup ice cubes
  • Whipped cream (for topping)
  • Blue sugar crystals or shredded coconut (for garnish)

Instructions

  1. Add frozen pineapple chunks, coconut milk, whole milk or plant-based milk, cream of coconut, vanilla extract, sweetener, and ice to a high-speed blender.
  2. Blend until smooth and creamy, with no visible ice chunks.
  3. Add blue food coloring or blue spirulina. Blend again briefly until the color is evenly distributed.
  4. Pour into two tall glasses.
