- 1/2 teaspoon vanilla extract
- 1/4 teaspoon blue food coloring or blue spirulina
- 1 cup ice cubes
- Whipped cream (for topping)
- Blue sugar crystals or shredded coconut (for garnish)
Instructions
- Add frozen pineapple chunks, coconut milk, whole milk or plant-based milk, cream of coconut, vanilla extract, sweetener, and ice to a high-speed blender.
- Blend until smooth and creamy, with no visible ice chunks.
- Add blue food coloring or blue spirulina. Blend again briefly until the color is evenly distributed.
- Pour into two tall glasses.
- Top each glass with a generous swirl of whipped cream.
- Sprinkle blue sugar crystals or shredded coconut on top for garnish.
- Serve immediately with a straw.
