Ingredients

  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 cup unsalted butter, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat your pellet smoker to 225°F.
  2. Season the prime rib roast with kosher salt, black pepper, garlic powder, and onion powder.
  3. Place the roast in the smoker and cook until it reaches your desired internal temperature.
  4. While the roast is smoking, prepare the cowboy butter by mixing the softened butter with parsley, chives, and smoked paprika.
  5. Once the prime rib is done, let it rest for at least 20 minutes before slicing.
  6. Serve with cowboy butter on top.
