Ingredients

  • 2 cups garlic cloves
  • 2 cups white vinegar
  • 1 cup water
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon red pepper flakes
  • 1 sprig fresh thyme

Instructions

  1. Peel the garlic cloves and set aside.
  2. In a pot, combine vinegar, water, sugar, and salt. Bring to a boil over medium heat.
  3. Add garlic cloves, peppercorns, red pepper flakes, and thyme to the pot. Simmer for 10 minutes.
  4. Remove from heat and let it cool for a few minutes.
  5. Transfer the garlic and liquid to a clean jar. Seal tightly and let it sit at room temperature for 24 hours.
  6. Refrigerate for up to two weeks before using for best flavor.

Notes

  • For a more intense flavor, allow the pickled garlic to sit longer in the fridge.
