Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 1 cup jasmine rice
  • 1 can (14 oz) pineapple chunks
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 cups chicken broth
  • 1 teaspoon sesame oil
  • 1/4 cup green onions, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and ginger and sauté for 1 minute.
  2. Add chicken thighs, cooking until browned on both sides.
  3. Stir in rice and cook for 2 minutes.
  4. Add chicken broth, soy sauce, and pineapple with juice. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes until rice is cooked.
  6. Remove from heat and let it sit covered for another 5 minutes.
  7. Drizzle with sesame oil and garnish with green onions before serving.
