- 1 pound chicken thighs, boneless and skinless
- 1 cup jasmine rice
- 1 can (14 oz) pineapple chunks
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 cups chicken broth
- 1 teaspoon sesame oil
- 1/4 cup green onions, chopped
Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and ginger and sauté for 1 minute.
- Add chicken thighs, cooking until browned on both sides.
- Stir in rice and cook for 2 minutes.
- Add chicken broth, soy sauce, and pineapple with juice. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes until rice is cooked.
- Remove from heat and let it sit covered for another 5 minutes.
- Drizzle with sesame oil and garnish with green onions before serving.
Notes
- For added flavor, marinate chicken in soy sauce for 1 hour before cooking.
